Cheesy Grits Recipe
1 cup chopped onion
2 Tbsp butter
1 cup grits
4 cups chicken stock
2 cups assorted grated cheese
Melt butter, add onion and sauté until tender, add pepper. Add grits and stir until coated and turning a bit brown. Add stock and stir. Bring to boil and then reduce heat. Cook for 15 minutes. Add cheese and bring back to a bubble. Serve warm or pour into baking dish and bake for 30 minutes until crunchy on top.
Optional: Pour into loaf pan. Chill. Cut into ½ inch slices, dredge in cornmeal and sauté until golden. Flip and brown second side. Serve as a side dish, or top with crème fraiche as an appetizer.
