Tomato Tart


Note: this recipe is open to interpretation- just guess and go. The most important tip is to use Dijon mustard and ripe tomatoes.
1 pie crust
Dijon mustard- enough to liberally coat the bottom of the pie crust.
4-5 tomatoes- ¼” slices shingled onto pie crust
Swiss cheese- 6-8 slices of any type- Gruyere or Jarlsburg are divine!
Bake at 400 degrees for 30-35 minutes until golden and bubbly.
Remove from oven and let rest for 10 minutes.
Cut into wedges and serve with a spring salad or appetizer.
