I’m going to let you all in on a little secret. I am crazy about lemon. There’s just something about its tartness that makes everything a little jazzier. Add blueberries and it’s over. I’m going to eat it all. So, as I started planning for some kind of amazing Easter dessert I was drawn to the idea of a lemon bar. Then I found something even better: Greek Yogurt lemon bars!

I’m the kind of Registered Dietitian that believes “all foods fit” and “everything in moderation”. So, I’m good with a full-on dessert from time to time. However, the idea of adding more nutrition to it just makes it that much sweeter. These creamy Greek Yogurt bars are the perfect way to treat my family, add some extra protein, while decreasing the sugar (and fat, if that’s your thing).

In case you were concerned these aren’t just as amazing as any other lemon cheesecake, here are some quotes from my co-workers (who I pushed this experimental dessert on prior to making it for my family, wink wink).

“It tastes like cheesecake.”

“I don’t even like lemon and these are good.”

“Those bars bar are yummy!”

Once I knew the bars themselves were serve worthy, it was time to up the ante. Remember that blueberry addiction I told you about? Why wouldn’t I add blueberry sauce? Seriously, a little bit goes a long way. If you want to keep these in that “more nutritious dessert” category, go easy on the sauce or choose to top with fresh fruit for the added vitamins and fiber instead.
