Ham and Cheese Egg Cups

Ingredients
 1 ½ cups milk
 4 eggs, slightly beaten OR (8 tbsp. dry eggs + 1 cup water)
 2 tsp Baking powder
 ¼ tsp black pepper
 1 tbsp dry ranch dip mix
 3 cups oats
 1 cup canned green beans, chopped
 ½ cup ham, diced
 2 cups cheese, grated
Directions

Preheat oven to 375°F.

Spray muffin pans with non-stick cooking spray.

In a large bowl, whisk together milk, eggs, baking powder, ranch dip mix, and pepper.

Stir in oats and let oats absorb mixture for at least 5 minutes.

Chop green beans into small pieces.

Stir green beans, ham, and cheese into oat mixture.

Scoop 1/4 cup of batter into each 16 muffin cups.

Bake 20-25 minutes until the edges start to brown and are firm to touch.

Cool on a wire rack.

The quiches may stick when hot but are easily removed when cooled.
