Ingredients
Lemon Curd
 ½ cup powdered confectioners' sugar replacement sweetener (Swerve)
 2 tsp grated lemon zest
 ¼ cup freshly-squeezed lemon juice
 3 eggs, beaten
 4 tbsp butter
  cup powdered confectioners' sugar replacement sweetener (Swerve)
 1 ½ cups heavy whipping cream
Directions

To make the Lemon Curd, combine 1/2 cup sweetener, lemon zest, lemon juice and eggs in medium saucepan.

Cook over low heat, stirring constantly until mixture reaches 160 degrees.

Stir in butter.

Cover surface with plastic wrap; chill.

Combine the Lemon Curd, 1/3 cup sweetener and whipping cream in a medium bowl and mix well.

Pour into ice cream freezer container and freeze according to manufacturer's directions.
