5 cups low fat or fat-free milk
1 cup uncooked white rice
½ cup sugar
½ tsp salt
1 tsp ground cinnamon
1 tsp vanilla extract
½ cup raisins

Combine milk, rice, sugar and salt in top of a double boiler.

Cover and cook over simmering water 1-2 hours or until thickened.

Stir in cinnamon, vanilla, and raisins.

Can be served warm or cold.
