Place liberal amount of spice brown mustard on 1 slice of sourdough, and top with shredded bacon slice and cheddar, colby-jack and swiss cheese slices and top with second slice of sourdough.
Sprinkle half of shredded milk cheddar on panini press with smooth plates then press assembled sandwich into shredded cheese.
Sprinkle remaining cheddar on top of assembled sandwich and close press.
Grill for 2 minutes or until cheese on outside is golden and crunchy and cheese on inside is melted.
Can also be made in a skillet, by turning sandwich over after 2 minutes, and grilling for additional 2 minutes.
