Combine peach schnapps, sugar and lemon juice in a small bowl.
Brush peach slices with vegetable oil; grill until warm and browned, turning once.
Remove peaches from grill; add to schnapps mixture, stirring to coat.
Butter 1 side of each bread slice.
Place 1 bread slice, butter side down, in heated skillet or grill pan.
Top with Monterey jack cheese, then basil, prosciutto and peach slices.
Spread mascarpone cheese on second bread slice; place, cheese side down, on top of the peach slices.
Grill on medium heat until browned.
Flip and grill the other side until browned and cheeses are melted.
