Preheat oven to 425 degrees.
In large bowl, add chopped cauliflower, lime juice, use ONLY about 1/4 of the cilantro, garlic, cumin, cayenne pepper, kosher salt, and black pepper.
Mix together well and set aside for at least 10 minutes.
Next add Olive Oil to mixture and coat evenly.
Transfer to 9 x 13 in. pan and spread out evenly.
Roast for 20 minutes then remove from oven, push mixture together.
Add remaining cilantro on top of roasted cauliflower and top with shredded cheese.
Return to oven for no more than five minutes or until cheese is melted.
