Prepare onion jam
Heat olive oil over medium-heat
Add onion to sauce pan and caramelize
Once lightly brown, add balsamic vinegar, salt, pepper, sugar, and bay leaf. Cover for 15 minutes on high heat, stirring regularly.
Jam is finished when the balsamic vinegar is reduced by half. Remove bay leaf. (Warning: Jam will be HOT)
Prepare garlic herb butter
Add butter, parsley, chives, oregano, S&P, and roasted garlic to food processor until incorporated.
OR mince herbs and garlic by hand and stir in until incorporated.
Butter the "pan" sides of the bread
Place the bread butter side down into a medium-heat skillet
Add a layer of jam followed by the cheeses
Top with second slice of bread
When golden brown, flip sandwich
Remove from heat, slice, and enjoy!
