Vegetable grilled cheese
Ingredients
 4 tbsp salted butter, softened
 2 slices country potato bread
 2 (1/4-inch) slices garden vegetable jack cheese (Heritage Ridge Creamery)
 2 (1/4-inch) slices beefsteak tomato
 2 (1/4-inch) slices salsa jack cheese (Heritage Ridge Creamery)
 4 fresh spinach leaves, trimmed
Directions

Heat skillet to 350 degrees.

Spread one tablespoon butter onto each side of bread slices.

Place bread slices, in skillet and cook until golden brown, about 2 1/2 minutes.

Turn bread slices over; cook until golden brown, about 2 1/2 minutes.

Top one bread slice with both slices garden vegetable jack cheese then the tomato slices.

Top the second bread slice with both slices salsa jack cheese and then the spinach leaves.

Cook until cheeses melt; flip the spinach-salsa jack cheese bread slice, cheese-side down, onto the second bread slice.

Flip the sandwich; cook 30 seconds.

Remove from skillet; cut in half diagonally. Garnish with parsley if desired.
