Ranch Garlic Grilled Five Cheese

Ingredients
 8 tbsp unsalted butter, softened, divided
 8 slices (1/2-inch thick) sourdough bread
 8 oz cream cheese, softened
 1 packet ranch seasoning mix
 2 tbsp all-purpose flour
 1 cup whole milk
 4 oz sharp white Cheddar cheese, shredded (1 cup)
 8 oz Monterey jack cheese, shredded (2 cups)
 1 tbsp minced garlic
 ¼ cup fresh parsley leaves, coarsely chopped
 4 oz plain goat cheese
 8 oz Colby cheese, cut into 8 slices
Directions

Preheat oven to 450 degrees.

Spread 6 tablespoons butter evenly on 1 side of each bread slice.

Arrange, butter side up, on baking sheet; toast in oven 4 to 6 minutes until lightly browned.

Mix cream cheese and ranch seasoning in a small bowl.

Melt remaining 2 tablespoons butter in a small saucepan; whisk in flour and cook until bubbly and smooth.

Slowly add milk; cook, stirring frequently, until mixture comes to a boil.

Remove from heat; add Cheddar and Monterey jack cheeses, stirring until melted.

Stir in garlic and parsley; let stand 3 minutes.

Spread cream cheese mixture equally on unbuttered sides of 4 bread slices.

Spread the goat cheese equally on unbuttered sides of remaining bread slices.

Place 1 slice Colby cheese on cream cheese-topped bread slice; spoon ⅓ cup melted cheese mixture on top, then second slice Colby

Top with second bread slice, goat cheese-side down.

Repeat with remaining bread slices.

Arrange sandwiches on parchment paper-lined baking sheet; spoon remaining melted cheese mixture over each sandwich.

Reduce oven temperature to 350 degrees; bake 5 minutes, then broil 5 minutes to brown cheese.

Cut sandwiches in half to serve. Garnish as desired. Makes 4 sandwiches.
