Ingredients
 12 oz campanelle pasta or bowtie macaroni
 1 cup bread flour
 Seasoning: onion salt, garlic salt, pepper
 4 oz smoked Gouda cheese, shredded (1 cup)
 2 oz baby Swiss cheese, shredded (1/2 cup)
 4 cups fresh bread crumbs (about 8 slices bread)
 2 oz grated Romano cheese (1/2 cup)
 ¼ cup (1/2 stick) butter, melted
 2 cloves garlic, shaved or chopped
 3 heirloom tomatoes, diced
 3 oz baby arugula
 12 slices pepper bacon, cooked until crisp and coarsely crumbled
 3 cups whole milk
Directions

Preheat oven to 350 degrees.

Cook pasta according to package directions in boiling salted water until al dente.

Immerse in ice water; drain.

In a large bowl, combine pasta, flour and seasoning; toss lightly.

Add Gouda and Swiss cheeses.

In a medium bowl, stir together bread crumbs, Romano cheese, butter, garlic and additional seasoning.

Sprinkle half the crumb mixture into a greased 9x9-inch baking dish.

Top with half the pasta mixture, the tomatoes, arugula, bacon, remaining pasta and remaining crumb mixture.

Add milk until pasta is covered.

Cover; bake 40 minutes.

Uncover and bake 8 to 10 minutes to brown crumbs.

Let stand 15 minutes.

Cut into squares to serve.
