Heat skillet or griddle to 375 degrees.
Brush outside of bun halves with Garlic Herb Butter.
Place one bun half in skillet, buttered-side down; top with pizza sauce, pepperoni, Mozzarella cheese and second bun half, buttered-side up.
Cook until golden, pressing down firmly; flip sandwich and cook until golden and cheese is melted.
Sprinkle with Parmesan and serve. (Panini press can also be used. Brush with Garlic Herb Butter after grilling.)
*Garlic Herb Butter: Combine 1/2 cup (1 stick) unsalted butter, softened, 2 teaspoons garlic salt, and 1/4 cup chopped parsley. (Makes about 3/4 cup)
